Hi: I have just fitted a dimplex inset fire and removed the 3 pin plug and wired the fire to a fused connection unit next to the fireplace

I have run a spur from the fcu to a double socket 1/2 metre away

Question: The double socket already  has three cables in the terminals, Can I wire in the spur to this socket , making 4 cables into the terminals?

you can if you can get 4 wires on the termnals securely, which isn't easy. You may be better off lifting floorboards to tap into cables under the floor with a maintenance-free junctio box.

If the circuit is supplied from a 32A (or 30A), protective device, have you confirmed that the socket with three cables does actually have two cables that are an intact ring circuit? if not then NO you can't.
