I have a ceiling rose which is wired with power and neutral coming from the consumer unit and blue and brown going to the light fitting plus an earth wire. I have a metal spot light fitting with just three terminals - blue, brown and earth. How do I wire this with the existing rose wiring as described ?

 
The information you have given is not enough to be able to ensure that we can correctly advise a course of action.

I might suggest that if you are not sure how this would be wired that you gain some on site advice from a  local electrician who could be sure of the wiring arrangement you have in place. 

Generally a loop in light fitting has a supply in, a supply out, and a switch wire to the switch; the line supply in and out are simply connection points and the return wire from the switch connects to the light fitting bulb connection itself, neutrals are common.  However this does not match your description so it is not clear what you have there.

 
If it's loop in at the Rose AND it's the last light then there may only be TWO cables.

Hard to tell without seeing it or a picture, but at a wild guess ( if it goes horribly wrong it's not my fault and this info is worth exactly what you have paid for it 😂)

mains in

n to lampholder

feed down to switch

switchwire back to lampholder

plus earths

you really need  to be careful and SURE of what you are doing
