i plan to post some letters to various businesses for work. they will be hand posted when i get some spare time. whats the best thing to write on the front? 'The manager'? any better idea's?

Target them carefully to the specific business' you want to work for.

Give the company a call and ask the name of the MD, proprietor, chief buyer or whoever.

Impersonal letters tend to go straight in the bin, far better to address them personally.

i was gonna get a full name/address where possible for those i think i have a better chance with. but for others i just want something to put on the front

The trick is not to make it look like junk mail. Andyc is right, if you just put MD, Purch. Mng. etc. chances are it won't even get to them. Statistically 10% is a good response rate with 10% of those, i.e. 1%, resulting in business. You have to kiss a lot of frogs to find a prince!

easier said than done. maybe i should make it look like an overdue bill of some sort so it gets some attention.... or maybe just stick to getting addresses from yell.com

Imagine receiving such a letter from a business/tradesman seeking work......

It will grab the attention, but in a sure-fire way that's guaranteed to lose a potential customer and ensure that they will not use you now or in the future! It will look seriously unprofessional.

If you are going to the trouble of hand-delivering letters, how about getting to speak to the "target person" in each company before even writing the letters. Find out if they already have the services of a spark; do they want the services of a spark. Find out what each business does, and target your letters appropriately so that your services and skills fill the target company's needs.
