Just been out to look at a job of wiring a commercial kitchen, but the client has no idea of the loading of any of his current equipment or any replacements/upgrades that he is likely to get.

He is going to get a 3ph head installed by the buildings owner!

Here's a list of what he's likely to want

Lighting (total 6 x 8' anti corrosive flours)

3 fridges (1ph plugged into std circuits)

4 commercial ovens (currently got 3 all running on 1ph)

1 commercial hob

1 commercial chip fryer

1 commercial dishwasher

2 commercial extractor hoods

1 vented hand wash

Then he wants several sockets dotted around for general stuff

Sockets and lighting are the easy part.... it's just the other stuff. At the moment all his stuff is configured 1ph, but he is looking at getting 3ph in the future. All heavy equipment will be run as radial circuits (prob with a 3ph isolator with a 1ph socket where needed at the moment)..

Has anyone got any ideas what the above kind of equipment pulls??

id guess 3KW for hand wash, and maybe .5KW each for extractor. other than that, i think everything would vary quite a bit between models so unless he knows which model then best not to install anything... or install 32A radials and tell him to buy what matches supply

What would you run out for the ovens???

16A 3ph??

20A 3ph??

Something I forgot before... would the extractors need 3ph & stop/starts in this environment??

there available in SP and TP...maybe install a few 32A SP and a few 20A 3ph?

or if you install 32A TP, at least you can easily connect as SP.

for fans, id guess these do come under the requirement of undervoltage so would need a DOL

 
I think it might be best to go with what he's got right now... and upgrade when it's needed.

As he's dry lining all the walls I did propose to run some 3x2 trunking around the rooms at the ceiling and then drop down in conduit as required! Easy for upgrades...

Although will be telling him to get 100A 3ph supply if poss..

 
I did give him a list of info that I'd need, in the beginning he didn't understand why I needed the rating of the appliances "they're all 240V" (well,, no but yes). He's going to get me the info in the next couple of days..

But as I said, I'll probably plump for some 3x2 trunking around the room and then drop down in conduit!!

 
Remember the 'discussions' re what a double socket outlet can handle (13A, 26A, etc) was suggested wise to only fit single sockets. Mr Sworld will tell you about the 2 13A coffee urns on a DSO...........

well price for 5A radials - when he finds out his new oven draws more than that and keeps tripping, just remind him that 'it is 240V!'

SSO running 2 x 2kw fan heaters and some other bits and bobs (lights etc..) and they wonder why the switch has stopped working!! :_|

 
happens all the time. lack of notice to people. maybe double sockets should be supplied with a warning that its only designed for 13A max between both sides, or add a fuse to them

 
install a TP DB in kitchen?
Lucky for him the site incommer is in a room which backs on to a room he is going to use as a store / office...

and the landlord is paying for bringing the new 3ph in!!

All I have to do is rip out all the old stuff steel galv / pyro and rewire
