I have been asked to carry out some work in a shop. Out back where the consumer unit is positioned there is a sink about 1m away, with is directly behind it. I have been looking in the reg's (BS7671) and can't see anything about safety distances...

May i please ask for your advice, as being a spark i really don't want to have to box it in with wood, as i would rather get a chippy to do it.

I would agree with Andy, there are some ip rated cu units available but from your description would not be required unless you as the electrician thought there may be a problem.

One branded ip rated cu units I have used is the protec range.

Normally used for garage forecourts, but excellent units, providing you add your own nuetral flying leads the unit comes pretty much very basic.
