Can any body tell me if a SMA SUNNY BOY SB 3000HF- 30 Inverter be used as a off grid as I'm planning to a off grid 3000w system for my shed

Only if it has the yellow casing. SMAs off-grid stuff is usually yellow.

They were not the most reliable inverter anyway, and were replaced with a better model within two years.

If you are keeping the whole system off-grid, it may well be cheaper to use several small Victron units connected to your battery stack

What batteries would you recommend and I really wanted to have it installed an all in one unit

For what? Shed, caravan, new build extension?

Fir my shed, I'll have a tv and also computer plus a 3d printer, I have with my son's help a concrete block shed just about to do the roof so wanted it all away from the house
