3 Phase Motor Speed Control

Sorry any help would be great full not my strong point!

Doing a job and need to connect a old fan that they have removed from else where the customer would like to be able to control the speed issue its 12kw 3 phase

Any one know how I would go about sorting this?

Was removed from a extractor system (some thig to so with potatoes) and was simply on/off
