Good point. I have often thought about this, but how do you combine all onto one bit of kit including the monitor ?

Yes ok, the picture above is a bit on the extreme side, but I am using it to show the principal.

For every DVR you have you should have a monitor. Imagine this. You have a 8 channel DVR and a "normal" 15 inch monitor, how small are the 8 pictures going to be on that monitor? its better to have 2 DVR's and 2 monitors that way the pictures will be bigger and easier to see.

You can't display two different DVR outputs on one TV at the same time, you can how ever switch them, but that involves more kit and which do you watch?

I have seen 16 channels shown on 1 monitor, but in order to make the each picture a reasonable size they were displayed on a 42inch TV, that's ok if you have the money, but I don't.
