Difficult without being there but I'm thinking in terms of  , possibly ,  a non existing Ze  , did you say it was TNS ?    Possibly the installation is using the gas pipes as an earth ,  circuit is from the "wrong" side of a dual RCD board ...thus tripping  ??    Just plucking them out of the air .     When you touch the plug pin on to the plate you could be earthing the whole installation which.......without the cooker ..is not earthed at all .

Or...  There could be a voltage on the ring earth  / front plate  which is only connected to earth when the cooker is plugged in , and RCD trips .

There may be a dangerous situation there , Mapleleaf , I think it's a priority job TBH  .

Could even have a plastic incoming  gas  main with a fault voltage on the internal pipework .........and ask if anyone else has done any electric work there .

Many houses have faults on the electrics  .... we did a board change recently .... ring main problems ...and every replacement metal light fitting was connected  between L & E .

Not sure if everybody knows but the flexible rubber hose on a free standing gas cooker is actually flexible steel inside the rubber hose, pop a continuity tester at each end  and you'll see, maybe it's the potential across the gas service and electrical supply, best check all the basics and continuity on the supply side of the electrics.

Volt meter between the gas pipe and cpc of the electrical circuit ?
