Most online sites are multiple choice and I don't believe it'll be multiple choice in the exam

Try the City & Guilds website. I got my past papers from there to study my Level 3

Don't quote me on this, but I think you'll find it very difficult to find past C&G principles papers online. Their assessment packs are password protected.
