Changing bathroom pull switch to wall switch ( advice please)

I am changing my bathroom pull switch to a wall switch.

I’ve made a channel in the wall for the cable. Can I simply clip 2 core and earth cable to the wall and plaster over it or do I need some protection to cover the cable before I plaster ?

Providing you have No joins and it is run in accordance within correct zones for cables then it is your choice. It may make replacing it nigh impossible should it ever become damaged so a piece of capping over the top may make replacing easier. The capping is not considered to be mechanical protection as such although it does generally stop the trowel from slicing the cable.
