I'm after a 2gang class 2 switch, do you recon I can get away with a standard switch and nylon screws? Also Do you know of any 4 or 5 ft fluorescent fittings that are class 2? I've had class 2 2d fittings from my wholesaler before, just want something brighter.

On what box? If you mount it on a pattress then standard screws are fine. If it's on a metal box then yes, nylon screws.

Don;t know about standard T8 fittings but some of the T5 sort of sized fittings may be class 2. Can;t think of any OTTOMH but they're basically just large undercupboard lights, and they're generally class 2.
